Our Estate Cabernet Sauvignon is our original New world style of big bold ageable wine. Deep ruby color dances in the glass with hints of soft raspberry and strawberry on the nose. Quickly exploding into bold Current and blackberry fruit with a bold middle exposing earthy and hints of Vanilla. Bold tannins have been softened by 34 months barrel aging and extended maceration. Ending with a long velvety finish exposing the micro fermentation nuances. This wine was made in two micro-fermentations concentrating on the beginning, middle and end of your wine experience.
At first glance, the glass is filled with intense color and viscosity. The beginning highlights the youthful blackberry fruit while bursting with layers of earth, dark cocoa, and black cherry, featuring a soft velvety mouth feel rounding out the mid pallet. The finish extends the flavors with a balanced acidity and a realization of the many flavors emerging in your mouth beyond initial taste, long after the sip is gone. This wine was made in eight micro-fermentations, Hand selected barrels of each style combined to focus on the beginning, middle and end of your wine experience.

Hugh expansion in the middle highlighting the Merlot’s intensity and expands by layering in the two clones of Cabernet Sauvignon expanding its depth and intensity. 50% Cabernet, 25% Cab Franc, 25% Merlot
